Traversez la ville jusqu'à Pudu, où les familles d'immigrés chinois de KL ont créé une culture culinaire épargnée par le tourisme. Passez devant la dernière porte de la prison de Pudu. Visitez l'échoppe de yong tau foo tenue par trois générations d'une famille hakka. Goûtez le pain de kopitiam d'une boulangerie fondée en 1935. Terminez dans une maison de desserts de cinquième génération avec une recette qu'ils n'ont jamais dévoilée.

Traversons la ville et direction Pudu. C'est le quartier où les familles d'immigrés chinois de KL ont créé une culture culinaire si parfaite que personne ne l'a jamais modifiée pour les touristes. Nous nous retrouverons devant la dernière porte restante de la prison de Pudu, construite par les Britanniques entre 1891 et 1895. Elle se dresse sur une ancienne nécropole chinoise, mais la plupart des visiteurs passent juste devant sans la remarquer. De là, nous marcherons dans Pudu même, le long des anciennes rues d'imprimerie où de lourdes machines d'époque tournent encore derrière des vitrines ouvertes. C'est un héritage vivant que la plupart des habitants de KL a oublié. Notre première halte est une entreprise familiale hakka de trois générations qui vendait du yong tau foo dans une charrette il y a 86 ans. Vous goûterez de la pâte de poisson faite maison farcie dans du tofu et de la courge amère, servie avec du chee cheong fun soyeux nappé de « tim cheong » sucré et de crevettes séchées croquantes. Ensuite arrivera un Curry Laksa brûlant avec son sambal fait maison qui vous frappe avant même que vous ne soyez prêt. Dans la boulangerie d'un kopitiam traditionnel (fondée en 1935), vous découvrirez la vraie culture du dabao (à emporter). Saisissez vous-même vos pains et vos tartelettes aux œufs sur les grilles, comme le font les locaux depuis des générations. Puis nous irons vers le seul centre de vendeurs de rue de ce genre à KL. Là, vous goûterez du kopi de Hainan chez Ah Weng Koh (une institution de KL depuis les années 1960, aujourd'hui tenue par la petite-fille du fondateur), vous croquerez dans un popiah aux bords croustillants qu'Auntie Mei roule depuis 1985, et si vous avez de la chance, vous verrez peut-être le maître plier à la main des petits pains au vin jaune, un savoir-faire cantonais-hakka qui disparaît lentement. Nous terminerons dans une maison de desserts de cinquième génération où la famille prépare de la pâte de sésame noir, de la pâte d'amande et des desserts aux noix avec une recette qu'ils n'ont jamais divulguée. Oubliez le latte art. Vous allez découvrir l'art du Tong Sui. À la fin de la visite, vous repartirez en connaissant une facette de KL que la plupart des visiteurs ne trouvent jamais.
